👃 Tasting Notes & Experience

The 2016 begins with a distinctly mineral profile of flint, struck stone, and matchstick, then opens toward lemon and bergamot, fresh herbs such as sage and rosemary, and floral notes of acacia, lilac, and vine flower. The attack is direct and energetic. Through the mid-palate the wine becomes broader and crisp, with impressive volume held in balance by straight, lively acidity. Peach and pear return on the palate, while the long finish is rich, precise, and carried by fine bitters.

❤️ Why We Love It

• A highly distinctive Sauvignon Blanc that emphasizes terroir and mineral complexity over simple varietal fruit
• Broad texture and richness remain beautifully controlled by freshness and acidity
• One of Bordeaux’s most unusual collectible whites, with the precision expected from Château Cheval Blanc

🍽️ Food Pairing Ideas

• Oysters, crab, or grilled shellfish
• Roast or grilled white fish with herbs
• Roast chicken with lemon, tarragon, or a light cream sauce
