Bibi Graetz

Bibi Graetz founded his winery in 2000 in Fiesole, on the hills above Florence. Coming from a family of artists and without a traditional winemaking background, he built the estate around a fascination with old vineyards and native Tuscan varieties, especially Sangiovese, Canaiolo and Colorino.

The estate’s philosophy centers on old vines, high-altitude sites, poor stony soils and natural vineyard work. In the Fiesole cellar, spontaneous fermentations, open-top barriques, manual punch-downs and seasoned wood are used to preserve freshness and vineyard character, while the flagship reds draw on some of Tuscany’s oldest vineyards across sites including Vincigliata, Lamole, Olmo and Siena.
