⚙️ Production
The grapes were pressed slowly and gently in a pneumatic press, followed by 24 hours of settling before racking into barrels. Alcoholic and malolactic fermentations took place in oak casks. The wine then aged for 12 months in barrel on lees and an additional 10 months in stainless steel on fine lees. Fining and light filtration were used only if necessary.
