Sauvignon Blanc with a Valencia accent and zero chill about being fancy. High-altitude fruit, oak-fermented, then pampered on lees in those wild spherical “Galileo” cement tanks.
Wine Description
Impromptu Sauvignon Blanc 2024 is what happens when Utiel-Requena stops being “just reds” and shows up in a crisp white shirt with great posture. This is Sauvignon Blanc grown around 700m altitude in inland Valencia, where the days ripen and the nights keep things snappy.
The winemaking is the flex: hand-harvested into small boxes, cold-soaked, fermented in new 400L French oak, then moved to spherical “Galileo” cement tanks and kept on fine lees until bottling. Translation: bright SB energy, but with texture and a little grown-up swagger.
Winemaker: Pablo Ossorio (credited by the winery as a founding partner and winemaker; vineyard work is credited to Rafa Navarro).
Vine-to-Table: Meet the Winemaker
Pablo Ossorio is one of the founding partners of Bodegas Hispano+Suizas and the house winemaker, known for pushing premium Valencia wines well past the “value zone.” The winery publicly frames the project around its founding team, including Ossorio (winemaking) and Rafa Navarro (viticulture).
The Vibe
Clean, sharp, and a little luxurious, like a crisp white button-down that costs more than it should but makes you look dangerously competent.
What it tastes like
Zesty citrus and herb-forward Sauvignon Blanc aromatics, with a rounder, creamier edge from the lees work and that oak ferment. It stays fresh, but it doesn’t feel skinny.
Pairing + When to drink it
Seafood, sushi, ceviche, salty snacks, roast chicken, and anything that usually begs for a squeeze of lemon. Drink it now through the next couple of years when you want crisp refreshment that still feels like you tried.

FAQs
Q: What’s the “Galileo” tank thing on Impromptu Sauvignon Blanc 2024, and why should I care?
A: The wine is moved into spherical cement “Galileo” tanks and kept on fine lees until bottling. That combo is typically used to build texture without making the wine feel heavy or overly oaky.
Q: Is Impromptu Sauvignon Blanc 2024 really from Utiel-Requena, not the coast?
A: Yep, it’s listed from Utiel-Requena in inland Valencia, and the fruit comes from high-elevation vineyards around 700 meters. Bigger day-night swings are part of why it can stay fresh even when it’s sunny Spain.
Q: Who’s behind Bodegas Hispano+Suizas, and what does the name mean?
A: The winery publicly presents itself as a partnership built by its founding team, including Pablo Ossorio (winemaking) and Rafa Navarro (viticulture). The “Hispano+Suizas” branding is tied to the founders’ identity and origin story as presented by the estate.
Q: How is Impromptu Sauvignon Blanc 2024 fermented? Stainless steel, oak, or both?
A: This bottling is described as being fermented in new 400L French oak barrels, then transferred to cement tanks for lees aging. It’s a deliberate “Sauvignon Blanc, but make it serious” choice.
Q: How big is Hispano+Suizas as a winery, really?
A: Bodeboca lists the winery as founded in 2006, with about 110 hectares of vineyard and roughly 130,000 bottles of total production. That’s not industrial, but it’s not tiny either.
