Domaine Caroline Morey
Domaine Caroline Morey began with the 2014 vintage, drawing primarily on vineyards from Caroline Morey’s father, Jean-Marc Morey, along with additional leased parcels. The domaine farms 7 hectares across Chassagne-Montrachet, Santenay and Beaune, with roughly 60% Chardonnay and 40% Pinot Noir.
The vineyards are worked traditionally with a combination of reasoned farming and soil cultivation, with vines ranging from about 10 to 70 years old. The aim is to preserve the plant and sustain the vineyards for future generations.
The white wines are fermented in 350-liter barrels with about 25% new oak and aged on their lees for 15 to 20 months depending on the cru and vintage. Reds are vinified in tank for 15 to 25 days with minimal intervention, while the proportion of whole clusters varies by site and vintage. The wines are bottled unfiltered, under natural cork and wax.
