Raymond Launay bought the two Gevrey grands crus in the early 1950s and, before his death in 2000, left the domaine jointly to his daughter and his grandson — only to discover she intended to sell. French inheritance law left him unable to prevent it, so he asked Xavier to fight. The case ran eleven years and was decided in Xavier's favour in 2011; roughly 4 hectares of the original 11.5 survived, including Latricières-Chambertin and Chambertin. In the cellar his approach is deliberately gentle: everything destemmed, a long cold soak, and pump-overs instead of punch-downs so the berries stay intact and build aroma. Neal Martin, tasting the range, remarked on a clarity that occasionally reminded him of Armand Rousseau.

❤️ Why We Love It

• A premier cru from a domaine rescued from disappearance by a fighter pilot
• Old vines on a south-facing 0.6-hectare parcel of clay and limestone
• One of the more talked-about young addresses in Pommard, still modestly priced

🍽️ Food Pairing Ideas

• Roast beef, venison and game
• Boeuf bourguignon and slow-braised dishes
• Aged hard cheeses

👤 Who This Wine Is For

✓ Drinkers who want structured Pommard with freshness rather than rusticity
✓ Anyone who likes buying from a domaine early in its rise
✕ Not ideal if you want a soft, immediately open Burgundy

By 2018 Xavier Horiot had found his stride. Century-old vines give tiny berries and low yields, which is why merchants who taste the range regularly single out the Perrières — it repeatedly shows above its classification. Xavier Horiot, a former French Air Force fighter pilot, spent ten years in court honouring his grandfather's wish that the domaine survive; roughly 4 hectares of the original 11.5 came through, and this parcel is the piece with the deepest family history. He began making wine at twenty at the family estate, worked under Joseph Voillot as a mentor and spent time at Vieux Télégraphe in Châteauneuf, then started his own domaine in 1997 with three hectares inherited from an uncle. In 2002 he changed course completely, in his own phrase moving from extracting to infusing; the pre-fermentation cold soak went in 2003. He bottles almost thirty separate cuvées rather than blending small parcels together, on the theory that making many wines teaches you faster. Épenots is the climat that contains Comte Armand's walled Clos des Épeneaux, and its iron-rich clay gives Pommard its structure; the 1914 vines here carry a Pinot Fin selection good enough that Rossignol uses it as the source for his massal plantings elsewhere.

❤️ Why We Love It

• Vines planted in 1914, fermented whole-bunch and kept separate until blending
• Only 25% new oak, and sulfur only at bottling
• A grower who remade his own style mid-career, and is sharper for it

🍽️ Food Pairing Ideas

• Roast beef, venison and game
• Boeuf bourguignon and slow-braised dishes
• Aged hard cheeses

👤 Who This Wine Is For

✓ Drinkers who want whole-bunch lift on a structured Pommard frame
✓ Anyone who liked the Comte Armand and wants the surrounding climat for comparison
✕ Not ideal if stems and their perfume aren't to your taste

//cdn.shopify.com/s/files/1/0701/1739/2436/collections/inbodega-region-burgundy_8d698417-7765-4477-8cfd-5ba0ed5dc2c8.jpg?v=1789966415
